Salmon x 120g
Cajun seasoning x 1tsp Salt x 1/2 tsp
Black pepper x 1/2tsp Olive oil x 2tbs
Roast Tomato Salsa
Tomato x 1 medium size
Yellow onion x 1/2 medium size Red onion x 1pc
Peeled garlic x 10pc
Green chili x 2pc
Red chili x 1pc
Lime x 2pc
Salt x 1 1/2 tsp
Black pepper x 2 tsp
Olive oil x 1/4 cup
W0W noodle x 100g
Roast tomato salsa sauce
i. Preparing the Salmon
Mix seasoning marinate together thoroughly
Marinate the salmon with the seasoning mix
Pan sear salmon until cooked
Let salmon cool, gently remove salmon and flake the salmon
ii. Preparing the Roast Tomato Salsa
Roast the tomato and all veggies ingredients on a pan until slightly charred outside and soften (drizzle some oil to prevent from over-burning).
Transfer all roast veggies into a processor and process until thick paste
Slowly add in the lime juice and olive oil while processing
iii. Assembling the Salad
Place noodle, cabbage, carrot , edamame, lettuce mesclun in a mixing bowl
Add in roast tomato salsa, olive oil, salt and black pepper into the mixing bowl and toss all ingredients together.
Transfer the noodle salad on the bowl/plate. Sprinkle alfafa sprout on top of the noodle salad.
Place salmon flakes on top of the alfafa sprout and drizzle additional roast tomato salsa around/on top of salmon.
