Ingredients
100g Thinly sliced pork belly
1 pcs Japanese white leek
160g ProTEGO™ Noodles
Broth for pork
30ml Water
10ml Sugar
30ml Mirin
30ml Sake
30ml Dark soy sauce
10g Scallion
Noodle soup
800ml Dashi soup
7.5ml Sugar
25ml Mirin
2ml Salt
30ml Light soy sauce

About The Recipe
Warm ProTEGO™ Noodles with Pork Belly (NIKU–ProTEGO™ Noodles) is a comforting creation by Watanuki Sensei from Tsuji Culinary Institute, specially crafted for The Food School Bangkok’s #waste2health showcase. Tender slices of pork belly are simmered in a savoury broth of dashi, soy, and mirin, then paired with soft, slurpable ProTEGO™ Noodles that soak up every note of umami richness.
Preparation
Step 1
Cut the thinly sliced pork belly and white leek into bite-sized pieces. Combine the ‘broth for pork’ ingredients in a pot and bring to a boil. Add the pork belly and white leek and simmer.
Step 2
Cut the scallions into 5 mm-wide pieces.
Step 3
In another pot, combine the ‘noodles soup’ ingredients and bring to a boil.
Step 4
Boil ProTEGO™ Noodles, then cool it in cold water and drain well.
Step 5
Reheat ProTEGO™ Noodles briefly in hot water, place it in a serving bowl, pour over the hot soup, and top with step ② and the scallions.
