Ingredients


  • 1 packet of ProTEGOnoodle

  • 2 fresh shiitake mushrooms, thinly sliced

  • ½ small cabbage, thinly sliced

  • ½ carrot, thinly sliced

  • 1 egg (optional)

  • 4 cloves of garlic, minced

  • 2 shallots, thinly sliced

  • Chilli padi, to your liking

  • 2 tbsp of low-sodium soy sauce

  • 1 tbsp of oyster sauce

  • 1 tbsp of fish sauce

  • 1 tsp of honey

  • 1 tsp of sesame oil

  • 2–3 small limes

About the Recipe


This recipe won second place at a collaborative cooking workshop jointly hosted by Temasek Polytechnic’s Diploma in Food, Nutrition & Culinary Science (FNC) and KosmodeHealth.


 It was crafted by TP FNC students, Faith Goh Zhuo Ying, Koh Kae Lyn, Faith Yeo Kee.


Preparation


Step 1 

Combine all ingredients for the sauce. Mix well and set aside.


Step 2 

Bring a pot of water to boil.


Step 3 

Cook the noodles in boiling water for 5 minutes or until desired texture. Drain and set aside.


Step 4 

Boil the sliced carrots for 1 minute. Drain and set aside.


Step 5 

Heat oil in a pan and sauté the shallots until fragrant.


Step 6 

Add the minced garlic and continue sautéing until fragrant.


Step 7 

Add the mushrooms, cabbage, and carrots. Add a splash of water to deglaze the pan.


Step 8 

Pour ¼ of the sauce over the vegetables. Add the noodles and stir-fry.


Step 9 

Add the remaining sauce and mix evenly.


Step 10 

Add chilli padi to taste and squeeze fresh lime juice over the dish.


Step 11 

Pan fry the egg if desired. Serve and enjoy.
