Ingredients
1 can Canned tuna(in water)
4 pcs Cherry tomato
1 pc Red onion
½ pc Cucumber
5g Ginger
10g Scallion
160g ProTEGO™ Noodles
Marinade
20ml Light soy sauce
10ml Vinegar
5ml Sugar
Noodle sauce
200ml Soy milk(no sugar)
100ml Green tea(no sugar)
30ml Sugar
30ml Dark soy sauce
10ml Miso
Proper amount of Rayu(Chili oil)

About The Recipe
Cold ProTEGO™ Healthy Noodles (Healthy Hiyashi ProTEGO™) is a refreshing noodle creation by Watanuki Sensei from Tsuji Culinary Institute, presented during The Food School Bangkok’s #waste2health showcase. Served chilled and topped with tuna, crisp vegetables, and a soy–green tea–miso dressing, the dish highlights the light and versatile texture of ProTEGO™ Noodles. Bright, wholesome, and beautifully balanced, it reflects the #waste2health vision, transforming sustainability into delicious, everyday nourishment.
Preparation
Step 1
Dice the cherry tomatoes, red onion, and cucumber into about 5 mm cubes. Finely chop the ginger. Slice the scallions into 5 mm pieces.
Step 2
In a bowl, combine the drained canned tuna with the vegetables from step ①. Add the seasoning ingredients for the marinade and mix well.
Step 3
Combine the ‘noodles sauce’ ingredients and adjust the taste.
Step 4
Boil ProTEGO™ Noodles, then cool it in cold water. Drain well and place in a serving bowl.
Step 5
Pour the sauce over ProTEGO™ Noodles, top with the tuna mixture from step ②, and drizzle with chili oil if desired.
