Ingredients


  • 1 packet ProTEGOnoodle

  • 1½ tbsp dashi powder

  • ½ carrot, chopped

  • ½ leek, chopped

  • 2 shiitake mushrooms, fresh (or choice), sliced

  • 1 tbsp white miso paste

  • 1 egg

  • 1 pcs tofu (optional), cubed


About the Recipe


This recipe won third place at a collaborative cooking workshop jointly hosted by Temasek Polytechnic’s Diploma in Food, Nutrition & Culinary Science (FNC) and KosmodeHealth. 


It was crafted by TP FNC students, How Weitong, Natanya Ho Sue Ean, Wong Yun Rui.


Preparation


Step 1 

In a medium pot, combine water, dashi powder, carrot, and leek. Bring to a boil, then simmer for 10 minutes to infuse flavors.


Step 2 

Add noodles directly into the broth (do not pre-cook). Cook for 10 minutes.


Step 3 

After 5 minutes, add sliced mushrooms and cubed tofu (optional) to the pot.


Step 4 

Once noodles are tender, stir in miso paste until dissolved. Do not boil after adding miso.


Step 5 

In a separate pot, bring water to boil. Simmer egg for 8 minutes for soft-boiled texture. Peel and slice in half.


Step 6 

Serve noodles and broth in a bowl, topped with halved egg. Enjoy warm.
